Thanks to Chef Monica Pope with T'afia and Beaver's (both in the Houston area) for this fresh take on strawberries!
Strawberry Sambal
1 tbls sesame oil
1/2 cup grapeseed oil
1/2 cup cider vinegar
1 cup sugar, organic
1 1" piece of ginger, minced
1 clove garlic, minced
sambal, to taste
1 tbls shallot, minced
4 tbls sesame seeds
2 tbls poppyseed
dash of soy sauce
1/4 cup pecans, roasted lightly & chopped
1 cup strawberries, chopped
2 sprigs mint, chiffonade
1 each avocado, cut, pitted, sliced thinly on the bias and fanned
kosher salt & black pepper
Combine all ingredients except the stawberries and avocado. To serve, peel, pit and slice the avocado and slice on the bias. Remove to a plate and presswith your fingers to fan out the slices. Top the avocado with the chopped strawberries and spoon dressing on top. Season with salt & black pepper.
