BIKINI FRITTATA
SERVES 4

INGREDIENTS:
12 EGG WHITES
2 CUPS COOKED SPINACH
1 MEDIUM ZUCHINNI
12 MEDIUM MUSHROOMS
SALT AND PEPPER
Extra Virgin Olive Oil

METHOD:
CHOP VEGETABLES IN MEDIUM DICE AND RESERVE
IN MEDIUM SAUTE PAN, HEAT 1 TBLP. E.V.O.O. AND QUICKLY SAUTE VEGETABLES SEPERATLY UNTIL TENDER.
REMOVE FROM PAN AND RESERVE, WHEN COOLED MIX TOGETHER
IN 6" TEFLON PAN WARM VEGETABLES AND ADD EGG WHITES
STIR MIXTURE UNTIL LARGE CURDS FORM
PLACE IN 325 DEGREE OVEN AND COOK FOR 3-4 MINUTES UNTIL SET
REMOVE FROM OVEN AND SERVE WITH WHOLE GRAIN TOAST AND FRESH FRUIT.
