Tomato and Avocado Salad with cilantro lime vinaigrette
1 english cucumber 1 small red onion julienne 10 roma tomatoes 2 avocados ripe .25lbs of queso fresca
Dressing 4 tlbs lime juice 2 tlbs honey 2tlbs aji mirin (rice wine) 2 tlbs Aguave nectar 3 tlbs apple cider vinegar 1 cup of olive oil .5 bunch of fresh cilantro Kosher salt to taste
Procedure In a mixing bowl add lime juice, honey, aji mirin, aguave nectar, apple cider vinegar and chopped cilantro. Using a whisk slowly add the olive oil and then season with salt Dice the avocado, tomato, cucumber, and queso fresca and add to the dressing with the onions. Marinated in the refriderator for at least one hour so the flavors can come together
