
Chef Scott Hoffner of Flippin' Out Crepes & Coffee shares this recipe for a Honey Badger Crepe.
Makes 6 servings
Filling Ingredients
24 ounces Plain Greek yogurt
¼ cup honey
1 tbsp agave nectar
2 cups granola
2 bananas sliced
1 cup sliced strawberries
1 cup blueberries
Powdered sugar
Sweet Crepe Batter
2 whole eggs
1 egg yolk
1 cup cream
1 cup milk
1/3 cup vanilla
1/3 cup sugar
1/4 cup agave nectar
3 cups flour
Let's Cook
Mix the honey and agave nectar with the yogurt and then add the granola and prepared fruit. Set mixture aside to chill until finished making the crepes. Combine all ingredients for the crepe batter except for the flour. Mix until smooth and then incorporate flour very slowly until you have an even consistency throughout. Spin crepes, stuff them with the yogurt filling, and fold them. Sprinkle with powdered sugar and enjoy!
