
Kyle Frederick of Zoes Kitchen makes a meal for four that includes chicken kabobs, Greek salad and rice .
Ingredients:
· Fresh chicken
· Lemon juice
· Olive oil
· Seasoning (Blend of garlic, salt, pepper and oregano)
· Sliced red onion
· Sliced green bell pepper
· Sliced cherry tomatoes
Preparation
Take one fresh chicken cut into 1" cubes and marinate in lemon juice and oil.
Season with a blend of garlic, salt, pepper and oregano.
Skewer alternately with red onion, green bell pepper and cherry tomatoes.
Grill until chicken's internal temperature reaches 165 degrees.
Greek Salad
Ingredients
· Fresh chopped romaine, iceberg and baby greens
· Vinaigrette Dressing (Blend of olive oil, red wine vinegar and mix of salt, garlic, pepper and oregano)
· Sliced cucumbers
· Sliced cherry tomatoes
· Sliced red onion
· Crumbled feta cheese
· Sliced bell peppers
· Pitted Kalamata Olives
· Whole pepperoncini
Preparation
Toss salad mix with vinaigrette dressing. Add cucumbers, cherry tomatoes, red onion, feta cheese, bell peppers, olives and pepperoncini. Pita bread served on the side.
Rice Pilaf
Ingredients
· Brown rice
· Chopped onions
· Zero trans fat butter
· Black pepper
· Chicken stock
· Beef stock
Preparation
Sauté chopped onions in zero trans fat butter. Season with black pepper. Add chicken and beef stock, bring to a boil. Cook rice until liquid is evaporated (about 30 minutes.) Stir and serve.
