
Big Momma's Favorite Chicken Thighs from Roland Dickey of Dickey's Barbecue
Ingredients:
- 6 bone end skin on chicken thighs
- 4 ounces soy sauce
- 2 ounces Red Wine
- 3 cloves chopped garlic
- 1 tbs season mix (Dickey's dry rub, or any Cajun type seasoning etc.)
- 1 tbs Olive Oil
- 3 strips of bacon cut in ½ (optional)
Preparation:
- Mix the soy sauce, red wine, and chopped garlic to make the marinade
- Put chicken breast in the marinade in plastic zip lock bag and marinade over night or at least all day
o You can put these in the plastic bag in the marinade before you go to work in the morning or if you prefer a bit of a stronger marinated do them over night
o This marinade is very mild and is sold in every grocery store
- Turn on oven 350 or lite charcoal grill and burn until the coals turn to white ash
- Remove chicken from marinade and pat dry
- Rub all chicken thighs with Olive Oil and dry seasoning
- If using bacon strips wrap each chicken thigh in a ½ strip of bacon and attach with a toothpick
- Cook chicken thighs in a 350 degree oven until done (approx. 45 minutes)
- Place on paper towel to drain fat and serve
- If you are cooking outside put chicken thighs on grill away from heat
- You must be there while they are cooking the whole time so they don't catch on fire
- They take about 30-40 minutes to cook on your grill depending how hot it is
- I like to turn them several times
Roland Dickey's Coleslaw
1 bag
pre-chopped cole slaw mix
2/3 cup
real mayonnaise
Juice of 1
lemon
1 tsp white
pepper
6 cloves
chopped garlic
4 tbsp
olive oil
1 tsp
salt
Mix all
ingredients well. Refrigerate overnight and serve
chilled.
Garnish with tomato if desired.
