
GRILLED CHOP WITH CORN AND BLACK BEAN SALAD AND JALAPENO BARBECUE SAUCE
GRILLED PORK CHOP
10 oz pork chop
Season with salt and pepper and grill until desired temperature of meat is reached; typically 10-12 minutes over medium high heat.
CORN & BLACK BEAN SALAD
Yields approx 1.5lbs
6 Fresh Corn ears
1 lb Black Beans
2 Red Bell Peppers (MED)
2 Red Onion
6 oz. Charred Tomato Salsa
3 oz. Olive oil blend **
1 Tablespoon Kosher Salt
1 Tablespoon Black pepper
1/2 cup Chopped Cilantro
Preparation:
1. Roast Corn and shuck. Cut kernels from cob.
2. Dice onion and bell pepper. Saute and reserve.
3. Combine all ingredients and serve on Grilled Pork Chop.
JALAPENO BARBECUE SAUCE
Saute 1/2 diced onion and 2 jalapenos diced in olive oil until thoroughly
softened. Add 1 quart of your favorite barbecue sauce and simmer for 20
minutes. Blend well and serve warm.
**eatZi's uses a 90% Canola/10% Extra Virgin Olive Oil Blend. Actually, any oil would be suitable...Canola, Vegetable, or Olive. This blend allows for higher heat and the great flavor of the olive oil as well.
