Homemade fruit rollups

Pineapple Beet Juice
-    1 bunch of beets with greens
-    1 bunch of kale
-    1 pineapple
-    2 green apple
-    2 roma tomato
-    2 lemon
-    2 carrots
-    1 cucumber
Add all ingredients to a juicer and store for up to 3 days

Berry Blasted Rolls

-    4 lbs of chopped fresh fruit
-    1/2 cup of water
-    Zest and juice of 1 orange and lemon
-    1/4 cup of local honey or sweetener of choice
Add fruit and water to pot and cook at medium heat until fruit is fork tender.  Add the zest and juice of 1 orange and lemon.   Add ¼ cup of sweetener.   Blend until smooth, like baby food.   Line a sheet pan with parchment paper, spray lightly Pam.   Place the puree in the pan, about ¼ inch thick.   Bake low and slow at 170 degrees for 6 to 8 hours.   It should be dry to the touch when done.    Cut into 2 inch strips, line with parchment paper and tie with ribbon.   Enjoy!

Goody It's Granola
1/2 C Raw Almonds
1 1/2 C Rolled Oats
1/4 C Raw Coconut Shreds (toasted)
1/4 C Dried Cranberries or dried fruit of choice
1/2 C plantain chips
1/4 C Local Honey
3 tbsp canola oil

Instructions:
Mix honey and canola oil together until combined.  Place almonds and oats on a lined baking pan and toss with honey mixture.  Place in 300 degree oven for 20 minutes, rotate pan 10 minutes into baking to ensure consistent browning.  Take out of oven and let it cool for an hour, toss the remaining ingredients, place in a airtight jar and enjoy!
