'South of Chicago' sausages

Thanks to Brian Luscher of The Grape and White Rock Local Market.

Brian Luscher's South of Chicago" inspired sausages
  Brian makes his sausages by hand, on all-natural smoked beef and pork frankfurter (and for store bought -- recommends the sausages at Rudolph's Meat Market in Deep Ellum)

TOPPINGS:
Homemade spicy mustard
Overnight cucumber pickles
Vidalia onions
Marinated Lemley's tomatoes (see recipe below)
Pickled sport pepper
Poppy seed pain au lait bun
 
Marinated Lemley's Tomatoes

Place the following in a bowl, then toss to incorporate.
Let sit for 15-20 to develop flavor.
2 medium tomatoes, washed, cored, diced
2 cloves garlic, minced
2 T extra virgin olive oil
Season to taste with sea salt and fresh cracked black pepper
Brian sells his sausages at the White Rock Local Market.
