Nicole's favorite! Her Nanee even mailed these to her in college.
1 ½ cups flour
2 cups sugar
½ cup cocoa
2/3 cup oleo, melted
4 eggs, well beaten
2 teaspoons vanilla
1 cup nuts, chopped (Nicole prefers pecans, but it's your choice)
Mix together all dry ingredients, except for nuts. Melt oleo and add to the dry ingredients; mix well. Add in eggs and vanilla and then nuts. Spread in slow-cooker and cook on HIGH for 2 ½ to 3 hours.
Championship Bean Dip
This is a crunch-tastic solution for serving a houseful of folks gathered to watch the big game.
1 16-ounce can refried beans
1 cup picante sauce
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
3/4 cup sour cream
1 3-ounce package cream cheese, softened
1 tablespoons chili powder
1/4 teaspoon ground cumin
Tortilla chips and salsa
In a bowl, combine all the ingredients and transfer to the slow cooker. Cover and cook on LOW for 2 hours, or until heated through, stirring once or twice. Serve with tortilla chips and salsa.
