Baked Greek vegetables ("Briami")

Thanks to Joanne Canellos for this great recipe! Visit the Greek Food Festival this weekend.



2    Zucchini squash
2     Yellow Squash
2    packages Fresh Green Beans
1    Red Pepper
1    large Onion sliced roundwise
2-3    Cloves of Garlic
1    8 oz. can of tomato sauce
    Salt and Pepper to taste
    Olive Oil
*Optional - 2 Red Potatoes
                      1  Eggplant

Sprinkle olive oil in baking pan - spread evenly with brush.  Add all vegetables and tomato sauce, sprinkle with salt and pepper.  Stir around to get everything mixed together.  Cover with foil and place in 325 degree oven.  Check and when vegetables are almost ready, remove foil and turn up heat to 350 to cook away excess liquid (if any).  Vegetables for this particular dish need to be well cooked.  This better allows all flavors to blend together.
