Hummus:
(makes 1½ quarts)
48 oz. garbanzo beans
1½ cups plain yogurt
5 roasted garlic cloves
¼ cup fresh lemon juice
1 tablespoon salt
¾ cup virgin olive oil
1 cup tahini (sesame paste)
½ teaspoon cayenne pepper
Place all in a mixer and blend
Corn Relish:
(makes 3 cups)
½ cup red onions chopped
8 oz. tomatoes chopped
1 fresh jalapeno chopped
¼ bunch cilantro
8 oz. black beans washed
½ cup frozen corn defrosted
½ red bell pepper diced
½ tablespoon blackening seasoning
¼ cup olive oil
Place all ingredients in a bowl and mix thoroughly
Can be used as a dip or a garnish
Tortilla crisps:
white tortillas, 12in
blackening seasoning
shredded mozzarella
Poke holes in tortilla with a fork
Evenly sprinkle seasoning and cheese on tortilla
Place in 350 oven for a couple of minutes (until cheese is melted and tortilla is brown & crispy)
Cut into 6 slices
Place 6oz of hummus in a bowl garnish with fresh, diced tomatoes and corn relish. Top with extra olive oil. Serve with tortilla slices.
For additional flavor, top with crumbled feta cheese and/or extra cilantro, if desired.
