MEDITERRANEAN QUINOA SALAD from START
VINAIGRETTE
INGREDIENTS for 30 fl oz
EXTRA VIRGIN OLIVE OIL - 1 Cup
CANOLA OIL - 1 2/3 Cups
APPLE CIDER VINEGAR - 1 Cup
LEMON JUICE - 1.5 tsp
LEMON ZEST - 2 tsp
CLOVE GARLIC MINCED - 1 TBL
DRY MUSTARD - 1 tsp
BLACK PEPPER - 1 tsp
SALT - 2 tsp
Whisk all ingredients until thoroughly blended.
FOR THE SALAD:
FRESH PARSLEY - 1 Cup, Chop the Parsley
FRESH CILANTRO - 1 Cup Chop the Cilantro
BROCCOLI CROWNS - 2 Cups Chop the Broccoli Crowns
RED ONION - 1 Cup, Small Dice the Red Onion
CHERRY TOMATOES - 1 Cup, Slice the Cherry Tomatoes in half
PITTED KALAMATA OLIVES - 1 Cup
WHITE QUINOA - 4 Cups
Toss Quinoa together with Olives, Parsley, Cilantro,
Broccoli, Red Onion, Cherry Tomatoes.
VINAIGRETTE DRESSING
1 Cup +1 TBL
Pour vinaigrette dressing over Quinoa mix and blend.
FETA CHEESE, CRUMBLED
Top with 2 Cups- Gently fold in the Feta Cheese
