Cast Iron Grit Pie

David McMillan's Cast Iron Grit Pie

Grits 2c  
Melted butter1.5oz
All Purpose flour1/8c
Eggs 4
Buttermilk 1/3c
Salt 1/2 tsp
Poblano, chilies 1" dice, 1/4c
Onion, 1" dice, sauteed
1/4c Bacon, cooked crisp, crumbled, 4 slices
Cheddar, 1/2" cubes, 1/4c
Smoked Mozzarella, 1/2" cubes, 1/4c
Fresh ground pepper to taste

1. In a bowl soften grits with back of a rubber spatula. Mash out lumps.
2, In a seperate bowl mix: flour, eggs, salt & pepperbuttermilk & melted butter.
3. Stir into grits.
4. Fold in all goodies.
5. Pour into pie tin lined with pie dough.
6. Bake at 325 for 30-40 minutes, just till set and dosen't jiggle. Cool at room temp on a rack.
7. Heat & serve.
