Lemon roasted asparagus, poached eggs, and smoked ham

INGREDIENTS:
8 LARGE EGGS
1 BUNCH MEDIUM ASPARAGUS
ZEST OF ONE LEMON
1 ½ QTS WATER
1 TBLP.  WHITE VINEGAR
1 LB. PIT SMOKED HAM (THINNLY SLICED)
JUICE OF ONE LEMON
1 TBLP DIJON MUSTARD
EXTRA VIRGEN OLIVE OIL
8 OZ BABY SPRING MIX LETTUCE

METHOD:
PREHEAT OVEN TO 400 DEGREES
PLACE WATER AND VINEGAR IN MEDIUM POT AND BRING TO SIMMER
PLACE ASPARAGUS ON COOKIE SHEET AND DRIZZLE WITH OLIVE OIL AND SEASON WITH SALT AND PEPPER
ROAST ASPARAGUS IN OVEN FOR 15 MINUTES, WHEN FINISHED REMOVE FROM OVEN AND TOSS WITH LEMON ZEST
WARM HAM IN OVEN AND RESERVE
WHILE ASPARAGUS IS COOKING, POACH EGGS IN WATER 2 AT A TIME UNTIL ALL ARE COOKED
COMBINE LEMON JUICE, MUSTARD AND OLIVE OIL TO FORM VINAIGRETTE.
TOSS SALAD WITH VINAIGRETTE AND ARRANGE ON PLATES.
EVENLY, DIVIDE HAM AND ASPARAGUS ON PLATES
TOP WITH TWO POACHED EGGS
DRIZZLE WITH VINAIGRETTE
