Thanks to Chef Kenny Bowers of Kenny's Wood Fired Grill for this tasty recipe.

APPROXIMATE CALORIES:   290

QUANTITY                INGREDIENTS

1 CUP                        EGG BEATERS

1/3 CUP                     SLICED MUSHROOMS

1/3 CUP                     CHOPPED RED BELL PEPPERS

TO TASTE                 SALT & BLACK PEPPER

2 OZ                           TURKEY/HAM /SMOKED SALMON (CHOPPED)      

2 TBS                         GOAT CHEESE

3 TBS                         SALSA (FAVORITE STORE BOUGHT)

LITE SPRAY               PAM SPRAY

PREPARATION

    SPRAY 10 INCH NON STICK SKILLET WITH PAM SPRAY.    PLACE OVER MEDIUM HIGH HEAT.  WHEN PAN IS HOT
    (PAM WILL BEGIN BUBBLING) , ADD EGG BEATERS.  LET COOK APPROX 1 MINUTE, EGG WILL START TO COOK ON THE OUTSIDE.  
    EVENLY SPRINKLE VEGGIES AND FAVORITE COOKED PROTEIN THEN DOT WITH GOAT CHEESE.  IMMEDIATELY COVER WITH TIGHT FITTING
    LID.  IN APPROXIMATELY 2 MINUTES OMELET SHOULD BE DONE.  

    REMOVE FROM HEAT.  TILT SKILLET OVER PLATE, OMELET SHOULD BEGIN TO SLIDE ON PLATE WHEN IT IS HALF WAY OUT FOLD OVER WITH SKILLET.      TOP WITH SALSA AND SERVE.          
BACHELOR QUICK VERSION

    IN A 1 QUART MICROWAVE SAFE DISH OR TUPPERWARE.  LIGHTLY SPRAY WITH PAM SPARAY.  ADD ALL INGREDNTS EXCEPT SALSA.  
    LIGHTLY COVER.  MICROWAVE ON HIGH FOR 4 MINUTES.  PLACE ON PLATE TOP WITH SALSA.
