One-pot Easter Stew

Syrian Spiced Lamb

Yield: 6 cups

AmountIngredient1 poundGround Lamb2 tablespoonsSyrian Spice Blend1 cupLentils4 cupsZucchini, diced3 cupsVegetable Stock½ cupRaisins3 tablespoonsPickled Ginger with Juice1 teaspoonParsley, chopped1 teaspoonMint, chopped1 teaspoonSalt1 tablespoonOlive Oil

·    Combine Syrian spice with ground lamb and sit for 1 hour
·    Saute in olive oil
·    Add lentils, raisins and stock
·    Simmer for 20 minutes, then add zucchini
·    Finish cooking then add herbs and ginger
·    Season with salt

AmountIngredient6 tablespoonsRoasted Cumin, ground3 tablespoonsRoasted Coriander, ground1 tablespoonsGinger, ground3 tablespoonsAllspice2 tablespoonsCardamom, ground1 ½ teaspoonsCinnamon, ground¾ teaspoonCloves, ground1 ½ teaspoonsWhite Pepper, ground

·    Simmer garlic in olive oil for 30 minutes over low heat until soft    
·    Puree with stock, salt and pepper
·    Store in refrigerator up to 1 month
