Good Day Cafe: Empanadas

Yannis Moati, co-owner of the Nuchas food truck which travels around Manhattan during the week and Brooklyn on the weekends, prepared empanadas during the Good Day Cafe segment.

Beef Empanadas

Makes 36

Corn Oil

1/4

Cup

Ground Beef

Scallions

Diced Onions

Diced Red Pepper

Pitted Sliced Green Olives

0.25

lb

Diced Potatoes

0.5

lb

Oregano

1/4

oz

Cumin

1/4

oz

Paprika

1/2

oz

Crushed Red Pepper

1/8

Instructions:

Place the oil in a hot pan.

Add onions, peppers and sauté until translucent

Add the ground beef  and mix in well until meat is cooked.

Add the Oregano, Cumin, Paprika and crushed red pepper.

Once all is cooked, add the potatoes and the olives.

Finally add the scallions to the mix and cook them for 5 minutes.

Remove from the heat and let it cool down before placing in the refrigerator.  

For better result, let the filling rest for 1 day in the refrigerator.

Then with a spoon or ice-cream scoop place on the empanada dough and fold it by hand or with a fork

Some recipes can also include hard boiled egg and or raisins.
