16 ounces softened Cream Cheese
2 cups crumbled Blue Cheese or Gorgonzola
2 cups Local Honey
2 cups Toasted Walnuts, rough chopped
1 cup chopped dried figs
1 Bunch Green Onions, chopped. (green part only)
2 Tbsp. Rosemary, finely chopped
½ tsp salt
Place all ingredients in large mixing bowl and thoroughly combine. Serve with crackers or crostini.
Can be served, cold, room temp or hot!
Honey Watermelon Limeade
Jack's Southern Comfort Food
8 cups watermelon puree (process cubed seedless watermelon in blender and strain through wire mesh strainer)
2 cups Honey mint syrup(combine 1 cup water with 1 cup honey, 1 bunch mint in a saucepan. Bring to simmer for 10 minutes, set aside to cool and strain through wire mesh strainer)
1 cup fresh squeezed lime juice, the juice of 12 to 16 limes, depending on size
2 Tbsp. fresh lime zest
Combine all ingredients in a pitcher, stir to combine and chill until ready to serve. Can be served immediately, poured over ice.
