Rochelle Trotter: Diabetes-friendly recipe for curried chicken salad with grapes

Diabetes awareness is important to Rochelle Trotter, who shared recipes for tasty food – like curried chicken salad with grapes - for diabetics, and explained how exercise can improve quality of life.

Exercise is good for diabetes because it:

  • lowers blood glucose levels
  • improves the body's use of insulin
  • lowers blood pressure
  • keeps heart strong
  • lowers weight
  • lower body fat
  • lower stress levels.

Curried Chicken Salad with Grapes

Adapted from Diabetic Meals in 30 minutes or less

Prep time 10 minutes, serves six

Ingredients:

  • 3 cups coked chicken breast, cubed
  • 1.5 cups red or green grapes, sliced
  • 1/2 cup celery, thinly sliced
  • 1 tablespoon scallions, sliced
  • 1/2 cup red bell pepper diced
  • 3/4 cup low fat mayonnaise
  • 1 tablespoon orange juice
  • 1 teaspoon curry powder
  • Ground pepper to taste

Combine first 5 ingredients in a bowl. Combine remaining ingredients in another and stir to mix. Add this dressing to the salad, toss and serve cold.

Serving ideas:

  • in a whole wheat pita for sandwich
  • in a hollowed out tomato
  • in romaine lettuce leaves as veggie wrap
