Ingredients 8oz Ground Beef 2 slices bacon 1 slice Colby jack cheese 1 leaf of romaine 2 slices of tomato Salt and Pepper to taste 1 brioche bun toasted 2 oz house mayo
House Mayo 4 cups of heavy mayonnaise 1/2 red onion 6 cloves garlic roasted ½ cup olive oil Salt and pepper to taste Julianne the onion and place in a pan, at a low heat slowly caramelize onion. Place the garlic cloves in a pan and cover with olive oil then with a lid or foil. Place in a 300 degree oven. Slowly roast the garlic in the oil until the cloves are fork tender. Once the garlic and onions are finished combine all the ingredients into a food processor and pulse until the mayonnaise is smooth
Assembly Place 1 oz of mayo on the bottom bun, one piece of lettuce, two slices of tomato, then the burger with the bacon and Colby jack cheese melted on top, the other ounce of house mayo , and finally the bun top. Stab it with a knife or a tooth pick to hold it together.
