Westin's pork chop and cran-apple brandy chutney

Pork chop & rub
1 tbs salt
1/2 tsp pepper
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp sage
Pan sear and finish in the oven at 400

Cran apple brandy chutney
1 apple peeled and sliced
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp salt
2 tbs brown sugar
1/2 tsp vanilla extract
2 tbs butter
1 oz brandy
1 oz apple juice
2 tbs dried cranberries

Season, sauté in butter, flambé, add vanilla & sugar, add apple juice and cranberries. Reduce liquid.  Pectin in apple will thicken the sauce.
