The Green Roll



7oz sushi rice

1 sheet nori

4 ea large asparagus grilled

½ avocado, diced very small

1tsp chives

6ea shiitake mushroom cleaned and stems removed-grilled

tt cayenne pepper

sprinkle of sesame seeds



Small dice 2 of the asparagus and reserve the other 2

Small dice the shiitake

Combine the shiitake, avocado, asparagus with the miso ponzu (see below)

For the roll

Spread the rice evenly on the nori sheet

In the middle of the rice lay the two asparagus down

Put a few spoon fulls of the grilled asparagus/avo mixture you just made over the asparagus

Here you can add bean sprouts, shredded carrots, pea shoots or whatever your heart desires

Sprinkle with sesame seeds

Roll it all up nice and tight then slice into 10 pieces

Garnish each slice with more of the asparagus/avo mix, some avo puree and a dusting of cayenne pepper if you wish



Miso Ponzu

2gram yuzu kosho

2gram miso paste

20 gram soy sauce

10gram sugar

5 gram yuzu juice

5 gram water


Avocado Cream

½ avocado

12oz crème fraiche

1tsp lemon juice or lime juice

¼ tsp Lemon zest or lime zest

Puree well with hand blender
