Beans & Cornbread's pan fried soft shell crab

Spring is the beginning of soft shell crab season in the low country. This recipe is gives you soft shell crab fried to a light crisp. The best part is you can eat the whole crab. Bon Appetit!

Ingredients:
4 fresh prime Blue Crabs (soft shell crab)
Kosher Salt
Cracked Black Pepper
¼ Cup flour
½ Cup vegetable oil

Directions:
1. Have crab cleaned and dressed at seafood counter of market. Sprinkle 2 pinches of salt and pepper on each side of crab.
2. Dredge both sides in flour. Heat half of cup oil in large sauté pan on medium heat for 6 minutes.
3. Place crabs in pan for 4 minutes on each side until golden brown. Remove and drain on paper towels.

Serve with coleslaw and tartar.  Add hot sauce to taste.
