Cold Water,1 Gal
2 T Kosher salt
Red Winter Wheatberries (soft) 6 cups
1 cup, fresh Squeezed Orange Juice
1 cup, dried cherries
1 cup sliced almonds
1 cup diced red apple
3/4 cup apple cider vinegar
1/2 cup Extra Virgin Olive oil
1 tsp salt
1 tsp black pepper
1 cup fresh basil and mint chiffonade
1/4 cup honey
Soak wheatberries for 1 hour in 1 gallon of salted cold water. Bring to a boil for 8 minutes then simmer for 45 minutes. Strain cooked wheatberries into a colander & run under cold water to shock. When cooled, transfer cooked wheatberries into a mixing bowl and top with orange juice, dried cherries, sliced almonds, apple, vinegar, olive oil, salt, pepper, fresh herbs and honey.
Mix thouroughly to combine and place in large bowl (about a gallon size) and store in fridge until ready to serve.
