Tuna Steak with Ponzu Sauce

INGREDIENTS
                                                                                                                             
6 EACH. 8-10 OZ  TUNA STEAKS 1-1/2" THICK                                         
1/3 CUP (APPROX) CAJUN SEASONING
6 TSP WASABI                           
6 TBS PICKLED GINGER
3/4 CUP PONZU (SEE ATTACHED RECIPE)
6 TBS GREEN ONIONS (CHOPPED 1/4 INCH)


PREPARATION
 
SEASON TUNA WITH BLACKENING SEASONING ON BOTH SIDES MAKING SURE IT IS WELL COATED.  

PLACE TUNA STEAKS ON HOTTEST PART OF WELL OILED GRILL OR HOT SKILLET.  (OIL SHOULD BEGIN TO SMOKE TO KNOW WHEN IT IS HOT ENOUGH).

COOK APPROXIMATELY 1 MINUTE ON EACH SIDE FOR RARE AND APPROXIMATELY 2 MINUTES FOR MEDIUM RARE.

IMMEDIATELY REMOVE FROM HEAT.  CUT TUNA ON THE DIAGONAL SO YOU HAVE TWO TRIANGLE SHAPES.  PLACE SHINGLED ON PLATE WITH WASABI, PICKLED GINGER AND SMALL DISH OF PONZU ALL SEPERATED ON THE SIDE.  
   

PONZU SAUCE


6 TBS SOY SAUCE
6 TBS EASONED RICE WINE VINEGAR
1/2 EA  LIMES  (JUICE OF)

COMBINE ALL INGREDIENTS. MIX WELL
