Stuffed Green Chiles

4 medium chiles

1 piece cinnamon stick

2 piece cloves

2 tbs cane sugar

1 qt water

2 piece 4 oz chicken breast diced

1 spring onion

2 piece garlic cloves

1 piece roma tomatoes

1 tbs tomato pure

2 tbs olive oil

Salt pepper

1 cup fresh cream cheese

1 cup cooked black beans

2 piece chipotle pepper purred

2 tbs cilantro chopped

1 cup chicken broth

1/2 cup heavy whipping cream

Black sesame seeds for decor

4 pieces corn tortilla optional

1 bunch fresh cilantro decor



Cook the black beans and puree them, in a sauce pot, add the chicken stock, cilantro and chipotle peppers and cook for 10 minutes add the cream and cook for 5 more minutes, take out from fire and blend for 20 seconds, set aside.

Dice chicken breast, in a sauté pan add the olive oil, chopped spring onion, garlic, tomato and tomato pure and cook for 2 minutes, season with salt and pepper, add the diced chicken breast and cook 3 minutes, set aside

In a small pot, add the water, sugar, cinnamon and cloves, to boil, add the chiles and cook them 3-4 minutes. Take out the green chiles and take the seeds out, fill them with the shrimp mix, cream cheese and serve with the black bean sauce.

Serve with sautéed sesame seeds no oil and decor with fresh cilantro leafs.

Serve with hot tortillas (optional).
