1 cup AP flour
1 1/2 teaspoons baking powder
1/4 teaspoon table salt
1 1/2 tablespoons granulated sugar (white)
1 egg (large), lightly beaten
1 cup milk
2 tablespoons melted butter (unsalted)
1/4 cups pecan pieces
In a mixing bowl combine all dry ingredients, flour, baking powder, salt, sugar. In a separate bowl mix together all wet ingredients, egg, milk, butter. Whisk the wet ingredients into the dry ingredients until smooth. Do not over mix. Add in pecan pieces. Cook in a waffle iron according to the machine's instructions.
Bourbon Peach Sauce
6 tablespoons brown sugar
4 tablespoons butter
2 cups fresh peaches, peeled and quartered
3 ounces bourbon
Half vanilla bean, seeds scraped
1/4 cup heavy cream
Melt butter over medium heat and saute peaches for 2-3 minutes. Add brown sugar and vanilla bean seeds. When sugar has melted add bourbon (away from flame) then flambe, allow the alcohol to cook off. Add cream and cook another 2-3 minutes.
Spoon caramel sauce over waffle. Scoop ice cream next to the waffle. Garnish with pecans.
