20 oz ground turkey (dark or white meat)
½ c red bell peppers, small dice
½ c zucchini or yellow squash, small dice
1 10 oz can refried beans
1 t garlic powder
1 t chili powder
1 t cumin
1 t paprika
½ t cayenne
(you can substitute with a low sodium taco seasoning packet + 1 cup water)
1. In a skillet over medium heat, add peppers & zucchini. Allow them to cook until they start to sweat and begin to caramelize.
2. Add turkey meat, stirring occasionally until cooked throughout.
3. Add garlic powder, chili powder, cumin, paprika and cayenne (or taco seasoning packet) and allow the meat to absorb.
4. Reduce heat to low and add refried beans. Stir to combine.
Breakfast: Huevos Rancheros: Break up tortilla chips add mix on top with a fried egg and hot sauce.
Lunch/Dinner: Wrap: Pick your favorite large tortilla layer this mix, avocado and cheese.
Quesadilla: Layer between corn tortillas, add cheese, bake in the oven.
Mexican Pizza: Add Grilled Corn, Fresh Tomato, Jalapenos on Grilled Pizza Dough.
Taco Soup: Add 4 Cups Chicken Stock and 1 cup frozen corn allow mix to reduce 15-20 minutes, top with cheddar cheese.
