Chef Kelli's heirloom tomato and corn salad

There is plenty of great late season fruits and vegetables at your local farmer's market these days. Tomatoes and corn just might top the list. Chef Kelli Lewton from 2 Unique Caterers and Event Planners has the following salad idea for your fall table.

Heirloom Tomato and Corn Salad

2 cups fresh corn kernels
¼ c diced red bell pepper
¼ c sliced green onions
1 c Shredded Kale
3 tb diced  pickled jalapeno
½ c pepper jelly
½ c shredded cucumber

1/4c Mayonnaise
¼ c Sour cream
3 Tb lime juice
Salt and pepper to taste
3 tb honey
1 tsp. chipotle pepper powder
1 cup greens; kale, baby or arugula
1 cup diced heirloom tomatoes

Mix all salad ingredients
Mix dressing in bowl and fold salad ingredients into dressing
Top with 1 cup of medium diced heirloom tomatoes, seasoned with sea salt Pepper and a couple tablespoon olive oil.
Place fancy greens, baby kale or arugula on bottom of serving bowl, spoon corn mixture over greens, then top with seasoned heirloom tomatoes
