Tuna Poke

Thanks to Chef Paul Niekrasz from HG Supply company for this recipe.

INGREDIENTS:   
3    oztuna, 1/4" dice  
1    t red onion, shaved  
1/4 t ginger, grated  
1/2 t jalapeno, fine diced  
1 1/2oz sesame coconut amino see recipe below (instead of soy sauce)  
1    t cilantro, chopped  
2    T avocado, 1/4" diced
2    pinch salt  
2    pinch pepper  
1/4 cup arugula  
2    cup napa cabbage  
1/2 t fried ginger   
1/2 t fried garlic
1    ea fried lemon slice  
1/2 t sesame seeds, black and white

PROCEDURES: In medium bowl toss mizuna and napa cabbage with 1T each of sesame oil and coconut aminos and pinch of salt and pepperIn small bowl mix tuna, avocado, onion, grated ginger, pinch salt/pepper, 1/2T each aminos and sesame oil, and jalapenoMound cabbage mix in center of salad bowlPlace tuna mix atop cabbage, creating as much height as possible.Garnish with fried ginger, garlic and lemon and sprinkle with sesame seeds              

Recipe for the Sesame Amino Vinaigrette on Tuna Poke salad
1 Tablespoon lime juice

2oz sesame oil 2oz olive oil

2oz coconut Aminos
1/2 teaspoon honey

stir together
