Carrot Orange Ginger Puree

Yield: 2 cups


2 cups Steamed Carrots, very soft

½ cup Fresh Orange Juice

1 teaspoon Orange Zest

1 tablespoon Fresh Grated Ginger

To taste: Honey

To taste: Salt (optional)


· Cook completely, at the very end, add fresh ginger for 2 minutes and steam together

· Blend thoroughly while warm with orange juice and zest

· Adjust with honey or sea salt if desired

Great folded into hot cereal, spread on toast like jam or whip with cream cheese and spread on zucchini or pumpkin bread
