Joe & Aldo's chicken parmesan

Andiamo is introducing a new, casual and affordable restaurant concept called Joe & Aldo's Italian Tavern.

Located on the lower level of the previous Andiamo Novi located at 42705 Grand River, the tavern offers signature Andiamo items and entrees ranging from $10 to $25. Learn more at www.joeandaldos.com.
 
Petto Di Pollo Alla Parmigiana (Chicken Parmesan)

Ingredients:
6 ounces boneless, skinless chicken breast
1 ounce flour, all purpose (for breading)
1 each egg, whisked (for breading)
1ounce seasoned Italian bread crumbs (for breading)
½ ounce toasted sesame seeds (for breading)
½ ounce grated parmesan cheese
2 slices mozzarella or fontina cheese
3 oz tomato sauce
Pinch of parsley
S&P

Procedure:
1. Combine the sesame seeds and Italian breadcrumbs together and reserve.
2. Season chicken with S&P on both sides, dust with flour, dipped in beaten egg, then press into sesame-bread crumb mixture on both sides.
3. Heat a large skillet with canola oil and sauté till golden brown on both sides.
4. Discard the oil from the pan and top the chicken with half of the tomato sauce, then cover with parmesan and either mozzarella or fontina cheese.
5. Finish in 375 F oven until fully cooked and chicken reads 165 F or greater on a digital thermometer.
6. Place tomato sauce on plate then chicken parmesan and top with chopped parsley.
