Pollo en Salsa Champinones

1 cup of milk

7 to 8oz chicken breast

1/3 cup Shitake mushrooms sliced

4 cloves chopped garlic

2 tablespoons of olive oil

1Ž4 stick unsalted butter

1/3 cup heavy cream


Soak the chicken breast in a cup of milk for an hour. Heat 2 tablespoons of olive oil in a medium sauce pan over medium heat. Season the chicken breast with two pinches of salt and a pinch of pepper. Sauté the chicken breast, 3 min. on each side. In a separate pan melt a quarter stick butter and sauté 1/3 cup of shitake mushrooms and chopped garlic for 1 minute. Then add the 1/3rd cup of heavy cream, lower heat and let sauce reduce for approximately 1 min. Plate the chicken breast and spoon the mushroom sauce over the chicken.

Sautéed Spinach

1 Clove Garlic

1 Teaspoon chopped shallots

1 cup of baby spinach

1 teaspoon olive oil.

1 pinch of black pepper

In sauce pan over low heat add the olive oil, garlic and shallots. Lightly sauté for 1 min. Add the baby spinach and sauté until wilted. Add a pinch of pepper.
