Golightly's spicy ground turkey and kale soup

Get this recipe courtesy of Chef Denetia Lyons and students from Detroit's Golightly Career and Technical Center.

1 Large Onion (diced)
3oz Olive oil
1 # ground turkey
2 Large Russet Potatoes (Split length wise and sliced
1 Table spoon Minced Garlic
1 cup sliced mushrooms
32oz Chicken Stock
2 cups of chopped Kale
1 teaspoon Onion Powder
1 teaspoon Red Pepper Flakes
1 teaspoon black pepper

1. Sauté Onion in olive oil until slightly brown.
2. Add potatoes and sauté until potatoes are slightly tender.
3. In a separate skillet sauté ground meat until light brown.
4. Add meat and sliced mushrooms to potato/ onion mixture.
5. Add chicken stock, minced garlic, onion powder, black pepper, and red pepper flakes bring to a simmer.
6. Add kale cover and let simmer for 15 minutes or until kale is tender.
7. Serve hot.
