Microwave Chicken Tortilla Casserole

(serves 2 to 4)

  • About 2 cups shredded cooked chicken
  • 1 cup (8 ounces) sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup canned French fried onions, such as French's
  • 1 can (4 ounces) chopped green chiles
  • 1 packet (1.25 ounces) taco seasoning
  • 3 tablespoons chopped fresh cilantro leaves
  • 2 large flour tortillas


Place the chicken, sour cream, 1 cup of the cheese, ½ cup of the onions, the green chiles, taco seasoning, and cilantro in a large bowl and stir to combine.  Tear one tortilla into small pieces and add it to the bowl, shirting again until the pieces are well incorporated.


Line a 10 inch pie plate with the remaining tortilla and spoon the chicken mixture onto it.  Place the casserole in the microwave oven and cook on 100percent power until it is hot, 5 minutes.


Remove the casserole from the microwave and top it with the remaining cheese and onions, then heat on 100 percent power until the cheese is melted, 1 minute more. Enjoy.


Note: Microwave ovens vary widely in temperature, so you may need to alter the cooking time to suit your microwave. Since the chicken is fully cooked in the dish, there isn't a danger of undercooking it; you can just go with these guidelines and give or take a minute or so if you feel it needs it.
