Smoked Salmon Cakes with Lemon Aioli and Citrus Scented Rice

Smoked Salmon Cakes (Serves 4)

INGREDIENTS

1lb piece of boneless , skinless smoked salmon filet

1 ½ c panko breadcrumbs (Japanese Style Bread Crumbs )

2 tbsp flat leaf parsley minced

2 tbsp minced shallots

1 tsp garlic minced

1 tbsp fresh dill chopped

1 tbsp lemon juice

2 tbsp mayo

2 large eggs be aten

½ c all-purpose flour

½ tsp kosher salt

¼ tsp pepper

½ c vegetable oil


METHOD

Using a food processer, chop the salmon into ¼ inch chunks and place in mixing bowl. Add ½ cup of the panko breadcrumbs , parsley, shallots , dill, lemon juice , mayo, and about ½ of a beaten egg and gently mix until all ingredients are well incorporated. Allow mixture to chill in the refrigerator for 30 minutes.

Divide chilled mixture into 4 inch thick patties . Set up a dredging station by placing the flour, panko and remaining eggs into 3 separate pans . Dip the patties into the flour to cove r a nd shake off excess . Coat each patty with egg then into the panko. Be sure to evenly coat all sides.

He at the oil in a large non-stick skillet on me dium high he at until the oil is very hot but not smoking. Add the salmon patties and allow to brown on each side, about 3 minutes per side or until golden brown. Serve with Lemon Aioli.

 

Lemon Aioli

INGREDIENTS

1 c mayo

1 tbsp fresh dill chopped

2 tbsp garlic minced

½ lemon zeste d

1 tbsp lemon juice

salt and pepper to taste


METHOD

Place all ingredients into glass mixing bowl and mix well. P la ce in refrigerator until ready to serve.

 

Citrus Scented Rice

INGREDIENTS

2 c chicken Stock

2 tbsp butter

1 tbsp ora nge zest

2 tbsp ora nge juice

1 tbsp lemon zest

1 c basmati rice uncooked

3 tbsp fresh basil chopped


METHOD

In a large saucepan, stir together all ingredients expect the rice and basil. Bring to a boil over high heat.

Then stir in rice , cover and reduce heat to low. Cook until a ll liquid has been absorbed, about 20 minutes.

Stir in fresh basil and enjoy!
