Spicy Tomato Soup & Grilled Cheese

Olive oil 2 t

Butter, whole 2 T

Onions, peeled, sliced 1 small

garlic, peeled, minced 1 T

red chili flakes small pinch

tomato paste 4 T

white wine 1/4c

canned chopped tomatoes 2-28 oz cans

chicken stock 2c

heavy cream 1 c

grated parmesan cheese ¼ c

salt &fresh ground black pepper to taste

1. Preheat a medium soup pan, over medium low heat.

2. Place butter in pan & oil and allow to foam.

3. Add onions and sweat until translucent.

4. Add garlic and chili flakes, cook until aroma is apparent.

5. Add tomato paste and cook until carmelized but not burnt.

6. Deglaze with white wine.

7. Add stock, heavy cream. Simmer.

8. Cook slowly approx. one hour.

9. Puree

10. Season to taste and serve.

Country-Style White Bread, sliced 4 pcs

American cheese 4 slices

Munster Cheese 2 slices

Swiss Cheese 2 slices

salt &fresh ground black pepper to taste

1. Preheat a large sauté pan, over medium heat.

2. Butter all slices of bread on one side.

3. Season buttered side with salt and pepper

4. Place in pan with buttered sides down.

5. Lay cheese on bread slices

6. Close sandwich once bread is toasted and cheese is melted

7. Cut in half and serve.
