Cafe Muse's tomato & cilantro braised salmon

Café Muse's Tomato and Cilantro Braised Salmon
4 - 6 oz salmon filets
5 Roma tomatoes, diced
1 medium red onion, thinly sliced
1 clove garlic, minced
Juice of 4 limes
2 teaspoons fresh cilantro, chopped
1/2 cup corn
1 cup cooked diced potatoes, suggest fingerlings
Salt and pepper to taste
Olive oil for pan

Using a sauté pan with a lid, over medium heat, lightly coat with olive oil. Toss in red onions and cook until softened.  Add tomatoes and remaining ingredients, finishing with the lime juice and salt and pepper.  Bring to simmer, reduce heat and cover with lid.  Cook until desired doneness of fish - about 5 -10 minutes.
Serve braised salmon in a bowl.
