12 chopped onions
8 diced green bells
3 c chopped garlic
5 lbs. cooked bacon pieces
1 c oil
12 chopped jalapeños (with seeds)
2 bunches diced celery (with leaves)
20 lbs. shredded cabbage
#10 cg tomato filets
3 c cider vinegar
4 c brown sugar
4 Tbsp kosher salt
4 Tbsp black pepper
4 Tbsp hot paprika
1. In a large pan, brown the bacon, garlic, peppers, celery and onions in the oil.
2. Add paprika, sugar, then deglaze with the vinegar.
3. Dump everything else in and simmer for 45 minutes, stirring occasionally.
4. Season with salt and pepper to finish.
