Tenderloin, Tomato & Mozzarella Tower with Pesto

6oz tenderloin

2 ripe tomatoes

1 ball of fresh mozzarella

salt & pepper to taste

2oz pesto


Cut tenderloin into three 2-ounce medallions and season to taste. Grill quickly over high heat to your desired temperature

Cut tomatoes into large thick slices. Season and grill for one minute, remove from grill

Cut mozzarella into quarter-inch slices, toast slightly with blow torch or under the broiler until lightly brown

Assemble the stack in alternating layers and top with pesto
