Cider-Mint Glaze for lamb inspired by LongHorn Steakhouse

Cider-Mint Glaze inspired by LongHorn Steakhouse
Yields about 1 cup of finished sauce

Ingredients:
• 2 oz. fresh mint rough chopped (stems and all)
• 1 cup cider vinegar
• ½ cup white sugar
• 6 oz. prepared brown sauce (You can use a dry package sauce from the grocery store)
• 1 tsp. finely chopped mint leaves

Directions:
In a 2 quart sauce pan combine the rough chopped mint, sugar and cider. Simmer until it turns into a syrup substance.  Strain out the mint and add the syrup to the prepared brown sauce and mix well. Add the fresh finely chopped mint, stir and serve with any type steak or lamb.

LongHorn Steakhouse is known for expertly grilled steaks … but our grilling expertise doesn't’t end there. We recently added Grilled Lamb Chops to our Chef’s Showcase menu, celebrating our Executive Chef’s culinary creativity. Here are some tips for how you can replicate a similar flavor at home:
Select and Cut High-Quality Lamb Chops
• When selecting your lamb, make sure the meat has a light pink to red color, and that it is fresh, never frozen and high-quality – like we serve at LongHorn.
• We recommend the Australian lamb, which is larger and has a more balanced flavor.
• If you have a full rack of lamb, hand cut one-inch thick slices starting at the end with the long bone, down to the end with the short bone.

Marinade and Season like a Pro
• Use canola oil, minced red onion, chopped garlic and a little parsley, and mix it into the lamb chops.
• Let the lamb chops marinate for at least one hour.
• Prior to grilling, season the lamb chops with sea salt and pepper to taste, allowing the natural flavors of the meat to come through.

Grill to Perfection
• If you’re using an outdoor char grill, heat the surface of the grill so that it’s very hot – about 475-500 degrees. A hot grill ensures a quick sear to lock in all the juices.
• If grilling indoors, use a sauté pan and add a coat of canola oil.
• Place the lamb chops in the center of the pan and grill for approximately 2-3 minutes on each side.
• Cook until its internal temperature reaches 140-145 degrees.

Serve Lamb Chops as Star of Meal
• For the LongHorn Steakhouse experience at home, place your perfectly grilled lamb chops atop whipped mashed potatoes and wilted spinach.
• Top the lamb chops with a mint-infused bordelaise sauce, like we do at LongHorn.
• You can also pair the lamb chops with Roasted Gold Beets topped with melted goat cheese, also available on LongHorn’s Spring Peak Season menu – which highlights the best ingredients of the season.
