Pop-up Restaurants: A new way to dine

Chefs technically don’t have to open their own business anymore, thanks to pop-up restaurants.

"They’re popular. They give us a lot of flexibility, a chance to try something new,” said Chef Meg Galus.

Galus is a pastry chef at NoMi, an upscale restaurant along the Mag Mile. She runs and creates the ‘sweet things’ such as chocolate in the kitchen. However, she doesn’t have to worry about the complications that come with running her own restaurant, and that's why she loves a good pop-up.

"Chocolate is why I went into the field of pastry, so to be able to focus so intensely on chocolate just for the next few weeks is absolutely amazing,” said Galus. “And the associated cost with starting a business is crazy, you know, when you're talking about labor and overcost and finding the space, and all the tiny details of opening that space…this kinda of gives us that platform already."

To Galus, this is a dream come true. Her pop-up will only be inside the Park Hyatt for the next couple of weeks. But if you check out social media and some pop-up websites, there are a number of pop-up restaurants and businesses.

They usually pop-up once a quarter, at a different location for one or two nights. Since the chefs, most of them upscale, are only doing it for a short time, they go all out on things to please the palette.

Galus and her special creations are no different.

For the next 16 days it's going to be all about chocolate: chocolate lollipops, chocolate covered hazelnuts and chocolate everything. That includes a big ol' bowl of chocolate.

But not a big bowl of headaches, because remember, the restaurant’s only temporary.
