6 pieces raw bacon
6 raw shrimp U12
2 Jalapeño (fresh) - cleaned and cut into strips
2 cups shredded monterey jack cheese
2 bamboo skewers
Clean and de-vein shrimp.
Butterfly the shrimp from the bottom side (reverse butterfly)
Stuff shrimp with jalapeño strip and large pinch of shredded cheese
Tightly wrap the shrimp with one piece of bacon
Place three shrimps per skewer so that the skewer holds the bacon in place.
Cook in a hot skillet or on an bar-b-q grill, turning frequently until bacon is completely cooked.
