Green Apple and Goat Cheese Salad

Champagne Vinaigrette 1-1/2 oz.

Mixed Greens-Mesclun 2 oz.

Granny Smith Apples, Sliced 1/8" ½ Apple

Candied Baked Walnuts ½ oz.

Goat Cheese(Quality Brand) Dime Size pieces ½ oz.

Red Onion, Sliced rings 5-6 cut in half

Apple Chips (Quality Brand) ¾ oz.

Kosher Salt & Black Pepper To taste

Candied Baked Walnuts ½ oz.

Goat Cheese(Quality Brand) Dime Size pieces ½ oz.


1. In a clean 6 qt stainless mixing bowl ladle 1-1/2 oz. of the champagne vinaigrette. Add the mixed greens, apple slices, 1/2 oz. of the candied walnuts, 3/4 oz. of the goat cheese, red onion, apple chips, and salt and pepper.

2. Using tongs toss together well, thoroughly coating the greens. Then shake the bowl so the heavier ingredients fall to the bottom and the lettuce rises to the top.

3. Present in a serving vehicle, stacking in a crisscross pattern, creating height in the center, and arrange some of the colorful ingredients on top.

4. Garnish salad with additional 1/2 oz. candied walnuts and additional 3/4 oz. of goat cheese.

Champagne Vinaigrette

3/4 oz. shallots(minced)

2 Tbsp. Dijon mustard

1/2 cup granulated sugar

3/4 Tbsp. garlic(minced)

1 cup champagne vinegar(quality brand)

1/2 Tbsp. salt

3/4 Tbsp. white pepper

3 cups canola oil

Combine shallots, Dijon mustard, sugar, garlic, champagne vinegar, salt & pepper. Blend with a Buerre stick or in a food processor until well blend or for about 15 seconds. Continue to mix and slowly add the oil in a thin steady stream until all oil is incorporated. The vinaigrette should be pale yellow in color with a somewhat creamy consistency.
