Meatless Monday: Southwest zucchini noodle dish

(WJBK) - Southwest Zucchini Noodle Dish from The Little Mustard Seed Café and Shoppe

Ingredients:
(organic and locally sourced whenever possible)
1 1/2 zucchini 
handful of grape/cherry tomatoes
1/4 avocado
1 cup black beans (cooked, drained, rinsed)
1/4 cup finely chopped onions
1/8 cup favorite salsa
salt and pepper to taste

Directions:

Cut ends off of zucchini. Use spiral slicer to spiral cut zucchini into long noodles. Add remaining ingredients and mix well. Season with salt and pepper if desired. Serve and enjoy your meal!

To enjoy a hot dish: Prepare zucchini as above. Heat salsa over medium heat on stove. (You may need to add a little extra salsa). Add tomatoes and onions. Let heat for about 2 minutes. Add black beans and zucchini noodles. Let cook for 4-5 minutes. Season with salt and pepper if desired. Enjoy your warm dish!
