1 cup white sugar
1/2 cup butter
2 teaspoons vanilla extract
2 tablespoons of blue food color
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
Preheat oven to 350 degrees F.
Line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time. Then stir in the vanilla.
Combine flour and baking powder, add to the creamed mixture and mix well.
Finally stir in the milk and blue food coloring until batter is smooth.
Pour or spoon batter into the muffin pans.
Bake for 30 to 40 minutes in the preheated oven. Bake 20 to 25 minutes. Cupcakes are done when a toothpick is inserted and it comes out clean.
3 cups confectioners' sugar
1 cup butter
1 teaspoon vanilla extract
1 to 2 tablespoons whipping cream
In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
