12 large eggs
12 large slices of ham or turkey
¾ cup of cooked yellow onions
½ oz. e.v.o.o.
1 ½ cup cooked baby spinach
1 cup shredded cheddar jack cheese
½ cup roasted red pepper
salt and pepper to taste
Grease muffin cups with e.v.o.o.
Layer ham on outside walls and bottom of cups.
Layer in onions, spinach, peppers and cheese.
Top with 2 eggs per cup and season to taste with salt and pepper.
Bake at 325 in conventional oven for 15 mins.
Rotate 180 degrees and bake for another 10 mins.
Served with either fresh fruit or small salad.
