Brownie's On The Lake prepares Oyster Rockefeller

Its oyster time!  Brownie's is excited to offer the very best in North American oysters.  Delivered fresh daily, the restaurant offers specials every Wednesday starting at 4pm.  Chef Doug Lawton from Brownie's On The Lake stops by the Fox 2 kitchen to make Oyster Rockefeller.

Here is the recipe:

Rockefeller sauce

4 strips of Bacon chopped
2 tbls unsalted Butter
1 Shallot
2 t minced garlic
2oz cups Sambuca
2 cups chopped baby Spinach 
2 cups Heavy cream
½ cup parmesan cheese
Salt and pepper to taste
1/3 cup panko bread crumbs
½ dozen oyster on the half shell
Rock salt
Lemon wedges for garnish
Cook bacon and butter in a sauté pan, until the bacon gets a little crispy. Than add the shallots, cook until soft. Add garlic, sambuca and spinach. When the spinach is wilted add cream, bring to boiled and parmesan cheese. Bring back to a boil.
Put rock salt on baking pan. Arrange oyster on the rock salt to steady them. Top each oyster with one table spoon of Rockefeller sauce and sprinkle panko on top. Bake in a preheated oven at 375 for 10 min or until golden brown, then served with lemon wedges.
